This recipe for banana oatmeal cookies is perfect for a quick snack, healthy treat, or even as an on-the-go breakfast! The base of the cookie is simple: bananas and rolled oats. But the mix-in ideas are endless! Throw in a small handful of your favorite nuts or nut butter, some chocolate chips, dried fruit, coconut shreds, etc! You can really get creative and it can be a great way to get rid of those last ripe bananas or the last handful of nuts. If you find these cookies are not quite sweet enough for your satisfaction, you can always add some honey or a sprinkling of brown sugar.

INGREDIENTS:

  • 2 ripe bananas
  • 1 cup rolled oats (quick or regular)

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. Mash the bananas and mix in the rolled oats. Mix in additional ingredients of your choice.
  3. Spoon a small amount of mixture (just short of two inches in diameter) onto a cookie sheet lined with parchment paper.
  4. Bake in oven for about 15 minutes. Let cookies cool for about five to seven minutes before enjoying!
