Now that it’s fall, it’s the perfect time to get cozy with a hearty soup. This sweet potato soup is gluten free, dairy free, and vegan, making it a healthy option that’s also super easy to make.
INGREDIENTS
- 3 sweet potatoes, peeled cubed
- 1 onion, diced
- 4 cups vegetable broth
- 3 cloves garlic, minced
- 3 carrots, diced
- 2 tsp. chili powder
- 1 tsp. smoked paprika
- Sea salt to taste
- 2 cups almond milk or milk of choice
DIRECTIONS
Put all ingredients (except the almond milk) in a slow cooker and cook on high for 3 to 4 hours. Once cooked, add the almond milk and use an immersion blender to blend smooth.
